Rivet (T. Turgidum), an ancient variety once widely grown in Britain during the Norman period, is making a well-deserved comeback thanks to its natural resilience and rich flavour. Its warm, nutty taste carries undertones of hazelnut, orange peel, and cloves, making it a unique grain with plenty to offer. Nutritionally, it’s an excellent source of protein, fibre, and minerals like iron and magnesium, providing a wholesome alternative to modern wheat varieties.

 

The rivet wheat we use in our Rivet Rigatoni is grown organically by Mark and Liz Lea at Green Acres Farm, where it thrives in low-input farming systems that honour the grain’s heritage.

 

Our Rivet Rigatoni is crafted using stoneground rivet wheat, carefully preserving the grain’s distinctive flavour and health benefits. As with all our pastas, we slow-dry at low temperatures to maintain the integrity of the wheat. The result is a hearty, flavourful pasta with a perfect texture, ideal for pairing with bold sauces.
